Treats at the Titty Table: Pancaaaakes!!!

We had a houseguest this past week, and we got to talkin’ about our mutual love/obsession with pancakes. They are THE BEST breakfast food. Pancakes are basically an acceptable way of eating cake first thing in the morning. So we had our own weird Iron Chef Pancake-Off. I found a bunch of random items (remember what I said about my grocery shopping addiction?) and laid them out, and from there we created some pretty baller cakes. Me: Caramel Apple Swirl—diced apple cooked in cinnamon butter and swirled with Trader Joe’s Salted Caramel Sauce. Mark: KILLED it with his Cookie Surprise—chunks of leftover chocolate hazelnut cookies, with an ungodly amount of extra chocolate chips.

You can literally add ANYTHING and it’ll be great! Also made, but not pictured, were Banana Walnut, Pineapple, and a few Plain. SO. MUCH. FUN! Seriously, next time you find yourself with breakfast guests, whip up a batch of this batter and let everybody go crazy.

Pancake Batter

2 ¼ cups all-purpose flour

¼ cup granulated sugar

1 ½ tbsp baking powder

1 ½ tsp cinnamon

¼ tsp salt

1 ¾ cup buttermilk (or whole milk + 1 ½ tbsp white vinegar)

3 large eggs

2 teaspoons vanilla extract

5 tbsp melted unsalted butter, plus more for coating the pan

*MY SECRET INGREDIENT: ¼ teaspoon almond extract. It doesn’t sound like much, but TRUST ME, it adds that hint of home to it.

If you don’t have buttermilk, add the vinegar to the whole milk and set aside while you assemble everything else. This will give it time to ‘sour’ the milk.

In a large bowl, whisk together the dry ingredients, set aside. In a separate bowl, whisk together the wet ingredients, add to the dry ingredients and whisk until fully incorporated. At this point you can make tasty plain pancakes, or add in some fun ingredients. When ready, heat a pan over medium heat, coat with butter, and add batter—you can do mini-sized, regular, or big boy ones! When the edges are light golden brown and the bubbles have started to pop, give ‘em a flip. They’ll only need about a minute to finish cooking.
